The term “green beans” is used in the coffee industry to describe the coffee beans by their greenish-blueish color when they have been hullled in preparation for roasting. The green bean in specialty grade coffee should come from ripe cherries, and never from, or include, beans derived from non-ripe or immature beans still in their green coverings. As with other fruits, the non-ripe beans are said to create bitterness, poor taste, and even acid reflux in susceptible stomachs.
When coffee beans are picked, there are bound to be some green or non-ripe beans among the ripe. We remove these beans by simple pressure of the mass when the ripe cherries pop and proceed to the next cylinder, while the immature, hard beans do not break and are pushed out of the continuum. Sandra Farms beans come from ripe beans only, and when hulled, neighbors will hand select only the ideal beans. The discolored or damaged beans are removed, leaving the uniformly greenish-blueish beans to enter our RICH, SWEET, SMOOTH Sandra Farms coffee.
